🧀 Mughlai Cheese Chicken Karahi

A luxurious twist on the classic karahi, Mughlai Cheese Chicken Karahi combines tender chicken with a rich, creamy gravy infused with aromatic spices, cashew paste, and melted cheese. This dish brings together the bold flavors of traditional karahi with the royal, velvety texture of Mughlai cuisine. Perfect for special dinners or when you want to serve something indulgent, it pairs beautifully with naan or paratha for a complete, satisfying meal.

🍗 Ingredients

For chicken:

  • 1 kg chicken (bone-in preferred)

  • 1/2 cup yogurt (dahi)

  • 1 tbsp ginger-garlic paste

  • 1 tsp salt

  • 1 tsp red chili powder

  • 1/2 tsp turmeric

For gravy:

  • 3 tbsp cooking oil or ghee

  • 2 medium onions (finely sliced)

  • 2 tomatoes (chopped or pureed)

  • 1 tbsp ginger-garlic paste

  • 1 tsp cumin seeds (zeera)

  • 1 tsp coriander powder

  • 1/2 tsp black pepper

  • 1 tsp garam masala

  • 1/2 tsp chili flakes (optional)

For Mughlai richness:

  • 1/2 cup fresh cream

  • 1 cup grated cheese (mozzarella + cheddar mix works best)

  • 10–12 cashews (soaked & blended into paste)

  • 2 tbsp milk (optional, for consistency)

For finishing:

  • 2–3 green chilies (slit)

  • 1 tbsp butter

  • Fresh coriander leaves (chopped)


🔥 Instructions

  1. Marinate the Chicken
    Mix chicken with yogurt, ginger-garlic paste, salt, red chili, and turmeric. Let it rest for 30–60 minutes.

  2. Cook the Base
    Heat oil/ghee in a karahi. Add cumin seeds, then onions. Fry until golden brown. Add ginger-garlic paste and sauté.

  3. Add Tomatoes & Spices
    Add tomatoes and cook until oil separates. Add spices and cook well.

  4. Cook Chicken
    Add marinated chicken. Cook until tender and oil comes on top.

  5. Add Mughlai Touch
    Mix in cashew paste. Lower heat and add cream and milk. Stir gently.

  6. Add Cheese
    Add grated cheese and mix until melted.

  7. Final Touch
    Add butter, green chilies, and coriander. Simmer for 2–3 minutes.
